I was watching Good Morning America this morning and was so excited to see a story about a famous person with nystagmus.  I've never heard of any famous people that have nystagmus, but apprarently, a singer in the group The Black Eyed Peas, has it.  This story was about a surgery to implant lenses in his eyes to help his eyesight.  People with nystagmus can still have eyesight issues with contacts or glasses because their eyes continue to move, but the lenses do not.  However, this guy had a surgery to implant lenses in his eyes that would move with his eyes. 

Connor has good eyesight right now, but as he gets older, it may worsen, not from the nystagmus, but from his genes from me.  However, with nystagmus, glasses may not help as much as they would someone else.  This article about this surgery gives me hope of options that will be available for him as he gets older.  I also like to see someone famous with the condition who has done really well for himself!

Yesterday at church, I was working in Kyle's Sunday School class and he took his shoes off and then all of the kids took their shoes off.  A little while later, I look down and Kyle has stolen another child's boots and put them on.  So, of course, I grabbed my phone and took a picture!

Then, this morning, he found Connor's rain boots and started walking around in them.  Again, I grabbed my phone and had to get a picture!

What's for Dinner?

I don't normally post recipes, but I decided to post two of our newest favorites today.  Several months ago, I found a recipe on Six Sisters Stuff for Black Bean and Corn Salsa Chicken Tacos.  I made it and LOVED it.  And, best of all, my kids LOVED it!  They have always eaten Mexican food really well and always eat beef tacos well, but they ate twice as much as normal the first time I made this recipe...and every time since!  The best part of this recipe is that it makes enough for one meal the night you make it, plus I am able to freeze two freezer bags of it to make on two other nights!  So, in one crock pot, with very little effort, I've made three home cooked meals!  I usually make it with 4 or 5 small chicken breasts, but last week I had Bible Study at my house and made it with 6 large chicken breasts.  It made enough for my family of four, 8 additional women, and THREE bags of freezer leftovers, plus enough leftovers for me to eat two tacos at both lunch AND dinner the next day!  As you can tell, I really like this recipe!

Black Bean and Corn Salsa Chicken
2 cans black beans, drained and rinsed
2 cans corn, drained
1 package taco seasoning
4-5 chicken breasts
1 cup salsa
3/4 cup water

Put beans, corn, taco seasoning, and water in crock pot and mix together until seasoning is dissolved. Place chicken breasts on top and spread salsa on chicken. Cook on high for 4-6 hours. Shred meat and serve however you want (with tacos, over chips, as quesadillas, eat it like chili, etc.). I like to shred the meat about an hour before I serve it and then let it cook another hour.  When I make it with 4 chicken breasts, I can shred the chicken fairly easily in the crock pot, but when I made it with 6, it was easier to take them out and shred them on a cutting board and then dump it back in ad mix it with the other stuff.  Garnish with cheese, sour cream, avocado, lettuce, tomato, or whatever you like.

Make sure you let the food cool before freezing it. On the day that you are ready to eat it, let it thaw and then cook on low in your crock pot for 2-3 hours.  I often halve recipes because we do not eat leftovers much, but with this one, I loved the leftovers and it makes plenty for additional meals.  It would be crazy not to make the whole recipe and freeze what is leftover since it takes just as much effort to make the whole thing as it takes to make half.
Another recent favorite meal is from a recent Rachael Ray Magazine.  This recipe is for Pork Sliders and we really like them.  I thought that the Dijon mustard on the pork tenderloin made it so good!  The first time I made them, I had enough for leftovers the next day and they were just as good the next day (and we do not normally like leftovers).  I made half a recipe for my family, but to serve a crowd or to have leftovers, you could make the whole recipe.
Photo Finish Pork Sliders
2 pork tenderloins, trimmed (about 2 1/2 lbs total)
2 tbsp. Dijon mustard
2 tbsp. EVOO
2 tsp. coarse salt
1/2 tsp. black pepper
16 brioche slider rolls, split (I couldn't find these so I used potato rolls from the bakery)
1 head lettuce torn into pieces (optional)
2/3 cup mayonnaise
Preheat oven to 450 degrees.  Put the pork tenderloin on a foil-lined baking sheet.  In a small bowl, combine the mustard, EVOO, salt and pepper.  Brush generously all over the pork.  Cook until the thermometer inserted reaches 155 degrees (I do 160).  Remove from the oven, tent with foil and let rest for 10 minutes.  Transfer the meat to a cutting boar and thinly slice at an angle.
Arrange 2 to 3 slices of pork on the bottom of each roll and top with lettuce (if desired).  Spread mayonnaise on the top of the rolls.

Pre-Haircut Pictures

Kyle's First Haircut

I finally broke down and gave into Jeremy and we took Kyle fo a haircut.  His hair had gotten very long...frat boy long or mullet long depending on who you asked.  But, I loved it!  It was his BABY hair and it took a long time for him to grow enough hair to be able to even see that he had hair.  So, I hated the idea of cutting it!  But, I finally did allow it to be cut today. 

We took him to the same children's haircut place that we had taken Connor when he was a baby.  Connor was only 14 months old when he had his first haircut, but Kyle barely had any hair at that point.  He was 21 months old for his first haircut!

The children's haircut place has a little fire truck and a little airplane for the babies to sit in for a haircut and they face a TV with cartoons playing on it.  Perfect distractions!  Kyle picked the fire truck for his haircut, but halfway through, he decided that he wanted to sit in the airplane.  We were the only people there this morning, so the lady picked him up and moved him in the middle of the cut! 

In the pictures, he looks scared to death, but he actually did great the whole time.  I think he was too busy staring at the TV to care too much about what was going on with his hair. 

Our little baby looks like a big boy now!  :(

Cow Appreciation Day

Today was Cow Appreciation Day at Chick-fil-A.  If you dress up like a cow, you got a FREE Combo or Kids Meal.  We have never participated before, but last year we happened to go to CFA on Cow Appreciation Day and wished we had dressed up.  It looked like fun!  Now, obviously the free food is a big plus in my book, but I just thought it would be fun to dress up and do something different today.  And, it was!  Connor was so excited about dressing up and when we came home, he refused to take off his costume!  And, Kyle just looked so cute!  At first, he didnt want to get dressed (because he doesn't want to sit stll long enough to get dressed) and he didn't want to put the sign on, but when he saw Connor's sign, he wanted the sign and the hat.  He was precious!  Yesterday, we headed to Wal-Mart to buy supplies and then I made our costumes last night.  The boys and I all wore black shorts with white shirts and I used double sided tape to stick black felt spots on our shirts.  I bought super cheap white hats from Wal-Mart and used a sharpie to make black spots on them.  I made the signs using a print out off of the CFA website and used rope we had at home.  The best part about the costumes is that everything is reusable for next year!

I didn't get a great picture of my little cows, but they sure were cute! Here is the best one I got... 

Jeremy met us at lunch and although he was not dressed up, we let him share our free food. Since three of us were dressed up, we could get three free meals.  So, we got two combos (for J and me) and one 6-pack kids meal for the boys to share, plus an exra milk (that they gave us for free).  Then, as we left, CFA gave us two coupons for free chicken biscuits and gave the boys small stuffed CFA cows.  And, we got to see several friends who were also dressed up! 

It was definitely a fun lunch!

I love taking pictures with my new camera!  I am still learning and do not know nearly enough to take truly great pictures, but I am enjoying practicing and love it when I get a shot of the boys that just melts my heart!  Who wouldn't want to take pictures of these two cute models?!


And, this is the one that just melted my heart today!  I love this picture of Connor....such a great smile!

Happy Fourth of July!

We hope that you have a wonderful Fourth of July!

Unfortunately, Kyle is sick with a fever, so we are not going to get to do anything fun today.  We played outside in the garage this morning, but, for the most part, our day will be spent hanging out at home.  Kyle plays well as long a he has had motrin recently, but as it wears off, you can tell he doesnt feel great.  Hand Foot and Mouth virus has been going around our area lately and a fever is the first sign and then a few days later sores in the mouth and a rash develop.  I am praying that Kyle does not have Hand Food and Mouth.  And, I am praying that Connor does not get whatever Kyle has.
